Ingredients
2 tablespoons butter
1 1/2 tablespoons minced shallots
1 cup brandy
1 cup dry white wine
2 tablespoons condensed Chicken Stock
2 cups heavy cream
1/2 pound cooked chicken breast, cut into 1/2-inch-wide slivers
1/2 pound cooked lobster, cut into 1/2-inch-wide slivers
1 teaspoon fresh tarragon or 1/2 teaspoon dried tarragon
1/2 teaspoon salt
1/4 teaspoon white pepper

Chopped fresh parsley
Directions
Melt the butter over medium-high heat in a large heavy skillet.
Saute the shallots for 1 to 2 minutes, until translucent.
Pour in the brandy and flambe. (Be prepared for the flames to jump quite high.) As soon as the flames die down, blend in the wine, chicken stock, and cream.
Simmer and stir the brandy cream sauce about 20 minutes, until it has reduced to a smooth, fairly thick consistency.
Lower the heat.
Add chicken, lobster, tarragon, salt, and pepper.
Simmer gently until chicken and lobster are heated through.
