Ingredients

 3 cups/750 mL/1 1/4 pt coconut milk
 2 cups/500 mL/16 fl oz water
 500 g/1 lb chicken breast fillets, cut into 1 cm/1/2 in thick strips
 Sliced ginger20 Gram
 1 teaspoon dried2 , cut into pieces
 1 fresh coriander root, bruised
 Kaffir lime leaves4 , shredded
 Red chillies3 , seeded and chopped
 Fish sauce2 Tablespoon
 Lemon juice2 Tablespoon
 Coriander leaves4

Directions

1. Place coconut milk and water in a saucepan and bring to the boil over a medium heat, add chicken, galangal or ginger, lemon grass, coriander root and lime leaves and simmer for 6 minutes.
2. Stir in chillies, fish sauce and lemon juice. To serve, ladle into bowls and scatter with coriander leaves.
