Directions
1. RED BEANS: In a pan heat 2 tablespoon oil on medium heat.
2. Add onions and garlic and sauté till onions are translucent.
3. Put tomatoes, salt and oregano. Continue to sauté.
4. Add beans and cook for some time. Set aside.
5. CHICKEN: Season the sliced chicken breast with salt, paprika and cumin.
6. In a pan heat 2 tablespoon oil and cook the chicken.
7. Once browned, chop into small pieces.
8. BURRITO: Take a tortilla. Spread it over a flat work surface.
9. Put 1 tablespoon each of chicken, tomato and bean mixture, rice, guacamole and sour cream.
10. Sprinkle cheddar cheese and fold the tortilla tightly.
SERVING
11. In a serving plate, cut the burrito into half and serve with 1 tablespon guacamole and 1 tablespoon sour cream.
