Chicken A La King Recipe
Ingredients
| 6 T. butter or chicken fat | ||
| Flour | 6 Tablespoon | |
| Salt | 1 Tablespoon | |
| Pepper | 1/4 Tablespoon | |
| Green pepper | 1/2 Cup (16 tbs), slivered | |
| 1 c. cream or top milk | ||
| 2 c. cooked chicken, cut up | ||
| Sherry | 2 Tablespoon | |
| Sliced mushrooms | 1 Cup (16 tbs) | |
| 1 1/2 c. chicken broth, well seasoned | ||
| Stuffed olives | 1/4 Cup (16 tbs), thinly sliced | |
Directions
Melt butter or fat, blend in flour, salt and pepper; cook over low heat until bubbling.
Remove from heat and stir in chicken broth and cream; bring to a boil and boil 1 minute, stirring constantly.
Stir in gently cut up chicken.
Just before serving add, if desired, sherry, and mushrooms, green pepper and olives. (Cooked ham may be substituted for half of the chicken.)
Serve on hot toast or rusks; or serve in patty shells.
