Chick Pea And Mint Rice Recipe
Be it a normal holiday lunch or an occasional spree, this Chick Pea And Mint Rice is something you would want to add to the menu. Yummm it goes with the fine assortment of spices and mint!
Ingredients
| Rice | 1 Cup (16 tbs), soaked | |
| Chickpeas | 1/2 Cup (16 tbs), boiled | |
| Chopped | 1/2 Cup (16 tbs), mixed | |
| Onions | 1/2 Cup (16 tbs), sliced | |
| Garlic | 1/2 Teaspoon, chopped | |
| 1 bay leaf (tej patta) | ||
| Mint | 1/4 Cup (16 tbs), chopped | |
| Lemon juice | 1/2 Teaspoon | |
Directions
Heat the oil in a non-stick pan, add onions, garlic and bay leaf and cook the onions are soft.
Add the vegetables, rice.
2 cups water and salt and cook over medium flame till the rice is partially cooked.
Add the chick peas, mint and lemon juice.
Mix well and cook covered over low flame
