2 20-ounce cans chick-peas, drained, or 1 cup dried chick-peas, soaked, cooked, and drained
 
1/3 cup chopped scallions
 
2 tablespoons chopped parsley
 
1/4 cup vegetable oil
 
2 tablespoons lemon juice
 
1/2, teaspoon salt
 
1/8 teaspoon dry mustard
 
Freshly ground black pepper to taste
 
Salad greens

Directions

1. Combine the chick-peas, scal-lions, and parsley. Blend together the oil, lemon juice, salt, mustard, and pepper and pour over the vegetables. Toss lightly. Chill for at least 1 hour, tossing twice during chilling.
