Chewy Apricot Bars Recipe
Ingredients
3/4 cup finely snipped dried apricots
1/2 cup butter or margarine, melted
1 1/2 cups packed brown sugar
2 eggs
1 teaspoon vanilla
2 cups all purpose flour
2 teaspoons baking powder
3/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup chopped pecans
Directions
Pour boiling water over apricots; cool 10 minutes.
Drain well.
In saucepan melt butter; remove from heat.
Stir in sugar.
Beat in eggs and vanilla.
Combine flour, baking powder, cinnamon, and salt.
Blend into butter mixture.
Stir in apricots and pecans.
Spread in greased 13x9x2 inch baking pan.
Bake at 350° for 30 to 35 minutes.
Cut in bars while warm
