Chewy Apple Cookies Recipe

Ingredients
1/2 cup butter
1 1/2 cups brown sugar egg
2 cups apples, cut into small pieces
1/2 cup dried apricots, cut into chunks
1/4 cup apple juice
1/2 tsp lemon juice
2 cups whole wheat flour
1 tsp baking soda
1/2 tsp salt
1/4 tsp ground clove
2 tsp cinnamon
Directions
Preheat oven to 350 °F (175 °C).
Butter a cookie sheet.
Set aside.
In a bowl, cream butter, brown sugar and egg.
Mix in apples, apricots, apple juice and lemon juice.
In a second bowl, sift together dry ingredients.
Fold into first mixture.
Spoon dough on a cookie sheet, using 2 tbsp (30 mL) dough for each cookie.
Bake in oven 10-12 minutes.
