Ingredients

 Water chestnuts1 Can (10oz)
 Fruit sugar3 Tablespoon
 Vanilla1/2 Teaspoon
 Orange rind 1 1/2 Teaspoon, grated
 Whipping cream3/4 Cup (16 tbs), Whipped
 Drained and dried canned mandarin oranges

Directions

Drain and dry the chestnuts and mince or grate on a fine shredder.
Mix with the next 4 ingredients, then fold in 1 cup of whipped cream.
Chill until serving time.
Divide orange segments between 6 small lacquer bowls or comports.
Top with scoops of chestnut cream.
Swirl a little reserved cream on top and garnish as you wish with bits of kum-quats, candied orange peel, chopped walnuts.
Pass almond cookies and green tea.
