Chestnut Mandarin Cream Recipe
Ingredients
| Water chestnuts | 1 Can (10oz) | |
| Fruit sugar | 3 Tablespoon | |
| Vanilla | 1/2 Teaspoon | |
| Orange rind | 1 1/2 Teaspoon, grated | |
| Whipping cream | 3/4 Cup (16 tbs), Whipped | |
| Drained and dried canned mandarin oranges | ||
Directions
Drain and dry the chestnuts and mince or grate on a fine shredder.
Mix with the next 4 ingredients, then fold in 1 cup of whipped cream.
Chill until serving time.
Divide orange segments between 6 small lacquer bowls or comports.
Top with scoops of chestnut cream.
Swirl a little reserved cream on top and garnish as you wish with bits of kum-quats, candied orange peel, chopped walnuts.
Pass almond cookies and green tea.
