Ingredients

 
2 cups flour
 
1 cup sugar
 
1 tbsp baking powder
 
1/2 tsp salt
 
2 eggs
 
1/4 cup cherry juice
 
3/4 cup milk
 
3 tbsp sunflower or vegetable oil
 
1/4 tsp almond extract
 
1 cup canned pitted cherries, drained, halved
 
1/2 cup walnuts, chopped

Directions

Preheat oven to 350 °F (175 °C).
Butter a 9 x 5 inch (23 x 13 cm) loaf pan.
In a bowl, sift dry ingredients.
Make a well in the center.
Set aside.
In a second bowl, beat eggs, cherry juice, milk, oil and almond extract.
Pour into well.
Beat vigorously to a smooth, creamy dough.
Set aside.
Lightly dredge cherries and nuts with flour.
Fold into dough.
Bake in oven 1 hour or so.
