Cherry-Oat Party Cookies Recipe
This Cherry-Oat Party Cookies are the most delicious cookies! Normally, my kids would never touch oat cookies...but this seems to be the only way to get them to eat it! The combination of the oats and cherries is really delicious. I sometime serve it with a scoop of ice cream...just to make it seem more interesting!
Ingredients
Shortening - 1 cup
Brown sugar - 1 cup, firmly packed
Sugar - 1 cup
Salt - 1/2 teaspoon
Vanilla - 1/2 teaspoon
Eggs - 2
Walnuts - 1/2 cup, chopped
Sifted flour - 1 1/4 cups
Soda - 1 teaspoon
Quick-cooking oats - 3 cups
Candied cherries - 18, quartered
Directions
GETTING READY
1) Grease baking sheets and keep aside.
MAKING
2) In a bowl, combine the shortening and sugars and beat till light and fluffy.
3) Add in the salt, vanilla, and eggs and beat well.
4) Stir in the nuts.
5) Combine and sift the flour and soda.
6) Add into the creamed mix and blend well.
7) Mix in the oats and mix.
8) Roll into 1-inch balls.
9) Coat with sugar and arrange on the baking sheets, spreading out about 2 inches apart.
10) Top each ball with a piece of candied cherry.
11) Place in a moderate oven at 350° F and bake for 12 to 15 minutes.
12) Cool for 2 minutes, then take off from the baking sheets.

13) Dust lightly with cinnamon and serve.
