Cherry-Glazed Cheesecake Recipe

Ingredients
Graham cracker crumbs - 1/2 cup
Softened corn oil margarine - 1 tbsp.
Liquid sweetener - 7 1/2 tsp.
Eggs - 3, separated
Cream cheese - 2 packages (8-oz. Each)
Sugar - 1 tbsp.
Vanilla - 1/2 tsp.
Cinnamon - 1/4 tsp.
Black cherries - 1 large can, pitted
Cornstarch - 1 tbsp.
Red food coloring - several drops
Directions
GETTING READY
1. Preheat oven to 325 degrees.
MAKING
2. In a bowl combine crumbs, margarine and 1/2 teaspoon liquid sweetener, mixing well and press mixture against sides of small springform pan.
3. In a blender, blend placing egg yolks, cream cheese, 6 teaspoons liquid sweetener, sugar, vanilla and cinnamon until mixture is smooth and pour into bowl.
4. Beat egg whites until stiff peaks form and fold into cheese mixture.
5. Pour into prepared pan and bake for 15 minutes.
6. Increase temperature to 450 degrees, bake for 5 minutes longer and let it cool
7. Drain cherries, reserving juice.
8. Add enough water to reserved juice to make 1 cup liquid and mix in cornstarch, blending thoroughly.
9. In saucepan place cornstarch liquid and cook over medium heat until thickened slightly.
10. Add 1 teaspoon liquid sweetener and food coloring.
11. Remove from heat and mix thoroughly.
12. Arrange cherries on top of cheesecake and spoon on glaze.
13. Refrigerate for at least 2 hours.

14. Serve as an after dinner dessert with garnish as desired.
