Ingredients
24 cherry tomatoes
250g peeled cooked prawns, finely chopped
1 spring onion, chopped
4 black olives, chopped
1 tblspn light soy sauce
Directions
Cut a lid from top of each tomato; hollow out centres, reserving pulp for another use.
Combine prawns, spring onion, olives and soy sauce in a bowl.
Mix well.
Stuff tomatoes with this mixture, replace lids and arrange on a serving platter.
