Cherry Tomato Kabobs With Chive Butter Recipe
Ingredients
| Chive Butter | ||
| 4 tablespoons butter or margarine, room temperature | ||
| Chives | 2 Teaspoon, minced | |
| Dried tarragon | 1/2 Teaspoon | |
| 16 cherry tomatoes, blossoms removed | ||
| 4 8-inch bamboo skewers, soaked in water 10 minutes, drained | ||
| Peanut oil, for brushing grill | ||
Directions
To prepare chive butter, mix softened butter with chives and tarragon, using the back of a spoon, or use a mini food processor.
Spoon chive butter into a small bowl.
Cover and set aside.
Thread tomatoes onto skewers.
Preheat stovetop grill.
Brush grill surface lightly with peanut oil.
Cook skewered tomatoes over medium heat about 1 to 2 minutes, turning often.
Tomatoes will begin to blister and brown.
Do not let tomatoes overcook and become soggy.
Remove to serving dish.
Spoon chive butter over tomatoes and serve hot.
