Cherry Refrigerator Cookies Recipe
Ingredients
| Shortening | 1/2 Cup (16 tbs) | |
| 1 1/2 cups fine white sugar | ||
| Eggs | 2 , Well beaten | |
| Juice and grated rind of 1/2 lemon | ||
| Almond extract | 1/4 Teaspoon | |
| All purpose flour | 2 1/4 Cup (16 tbs) | |
| Baking powder | 1 1/2 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Cherries | 2/3 Cup (16 tbs), candied | |
| Candied pineapple | 1/3 Cup (16 tbs), chopped | |
| 1/2 cup chopped almonds or filberts | ||
Directions
Cream shortening and sugar together.
Add eggs, lemon juice, rind and almond extract.
Stir in sifted dry ingredients, then fruit and nuts.
Mix well.
Chill dough.
Form into 1 1/2-inch rolls.
Wrap in wax paper; chill again.
Slice 1/4 inch thick and place on greased cooky sheets.
Bake at 400F for 10 minutes.
