Cherry Pee Special Recipe
Ingredients
| Cherries | 2 Can (10oz), pitted | |
| Quick-cooking tapioca | 2 1/2 Tablespoon | |
| Salt | 1/4 Teaspoon | |
| Almond extract | 1/4 Teaspoon | |
| Lemon juice | 1 Teaspoon | |
| Red Food Color | 4 Drop | |
| Sugar | 1 1/4 Cup (16 tbs) | |
| Rich Pastry | ||
| Butter/Margarine | 1 Tablespoon | |
Directions
GETTING READY
1) Preheat the oven to 425F.
MAKING
2) Drain cherries and transfer 1/3 cup of the cherry liquid into the mixing bowl.
3) Add in the tapioca, salt, almond extract, lemon juice and food colour.
4) Next, add in the cherries and 1 cup of sugar. Mix well and let rest.
5) Meanwhile, fit in the pastry into the 9" pie pan. Remove 1/2" of dough that falls out of the outer rim.
6) Fill the pastry with the cherry mixture and dot with butter on top.
7) Sprinkle the remaning sugar on top.
8) Dab water over the rim of the pastry. Make crisscross interlaces across the top with 14 strips. Press the ends of the strips onto the rim and fold the bottom crust over the rim.
9) Dab more water over the rim to seal. Circle it with the 4 remaining strips. Press down with a firm hand.
10) Circle the pie with a foil collar to avoid the rims brown faster than the rest of the pastry.
11) Fold the foil over the rim. Bake for about 40 to 45 minutes.

12) Serve the Cherry Pee Special warm.
