Cherry Layer Creams Recipe

Ingredients
2 pints milk
1 oz. gelatine, softened in 2 tablespoons cold water
4 oz. fine semolina
4 oz. castor sugar
1 teaspoon vanilla essence
2 medium cans red cherries, stoned and halved
2 egg yolks
2 egg whites
Directions
Gently heat milk and gelatine in a large saucepan until gelatine dissolves.
Gradually add semolina and cook, stirring, until mixture comes to the boil and thickens.
Cook gently for another 3 minutes; remove from heat and stir in sugar and egg yolks.
Whisk egg whites until stiff and fold into semolina mixture.
Fill glass dessert dishes with alternate layers of halved cherries and semolina cream.
Garnish with cherry halves.
Chill until lightly set.
