Ingredients

 One 3-ounce package cherry-flavored gelatin
 Boiling water1 Cup (16 tbs)
 Ice water3/4 Cup (16 tbs)
 Lemon juice1 Tablespoon
 1 teaspoon grated lemon rind
 Egg whites2
 3/4 cup nonfat dry milk powder
 Ice water1/4 Cup (16 tbs) (TOPPING)

Directions

1. In medium bowl, blend gelatin and boiling water; stir to dissolve gelatin. Blend in 3/4 cup ice water, lemon juice and lemon rind. Chill until semi-set, about 1 hour.
2. Using electric mixer at high speed, beat egg whites in large bowl until stiff peaks form. Using mixer at high speed, beat gelatin mixture in another bowl until light and fluffy.
3. Using rubber spatula, fold gelatin mixture into egg whites. Spoon into four 10-ounce custard cups; chill until completely set, at least 2 hours.
4. To make topping, blend dry milk powder and 1/4 cup ice water in small bowl; using electric mixer at high speed, beat until stiff.
