Cherry Coffee Cake Recipe

A good Cherry Coffeecake recipe is rare to find, you are lucky to have hit the right page. Fruits is one of the few ingredients I like to include in my daily cooking and this is my comfort recipe that I usually prepare using it. It is the perfect choice for Dessert. This Cherry Coffeecake is the something that you should eat while on a Diabetic diet. It is highly recommended to try out this great Cherry Coffeecake recipe.

Ingredients

 
1 pkg. dry yeast
 
1/4 cup warm water
 
1/4 cup skim milk
 
1 tsp cider vinegar
 
1/2 cup granulated sugar
 
2 tsp margarine, softened
 
1 egg
 
1 tsp baking powder
 
1/2 tsp salt
 
3 1/4 cup all-purpose flour
 
1 1/2 cup fresh or frozen sweet cherries, thawed and drained

Directions

Dissolve yeast in warm water in a large mixing bowl.
Add milk, vinegar, sugar replacement, margarine, egg, baking powder, salt, and 2 c. (500 mL) of the flour.
Beat on low until mixture is blended; then mix on medium for 2 minutes.
Stir in remaining flour.
Transfer to a lightly floured surface, and knead until smooth and elastic (about 5 minutes).
Roll dough into a 20 x 6 in. (50 x 15 cm) rectangle.
Place on a greased cookie sheet.
Cut 2 in. (5 cm) slices on each of the 20 in. (50 cm) sides of the dough.
Cut cherries in quarters.
Place cherries lengthwise down the middle of the rectangles.
Crisscross sliced strips over cherries.
Cover and allow to rise in a warm place until double in size.
Bake at 375°F (190°C) for 20 to 22 minutes or until golden brown.
