Cherry Chicken Recipe
Ingredients
| 2 whole medium chicken breasts (about 1 1/2 pounds total), skinned, boned, and halved lengthwise, or 4 turkey breast tenderloin steaks, cut 1/2 inch thick | ||
| Lemon juice | 1 Tablespoon | |
| 1/2 cup cherry or seedless red raspberry preserves | ||
| Dash ground allspice | ||
Directions
Rinse chicken or turkey; pat dry. Place on the unheated rack of a broiler pan. Broil 4 to 5 inches from the heat for 6 minutes. Brush with some of the lemon juice. Turn poultry over. Brush with remaining lemon juice. Broil 6 to 9 minutes or till tender and no longer pink.
For sauce, in a small saucepan cook and stir the preserves, lemon juice, and allspice over low heat till melted. Remove from heat. Pass sauce with chicken or turkey.
