Cherry Bars Recipe

Ingredients
Crust
1 cup flour
1/3 cup butter
2 tsp Powdered Sugar Replacement
Filling
1/2 cup sour cherries, fresh or well drained
2 eggs
1/4 cup granulated brown sugar replacement
1/2 cup unsweetened coconut, grated
2 tsp flour
1/2 tsp baking powder
1/2 tsp salt
1 tsp vanilla extract
Directions
Combine ingredients.
Work with pastry blender or food processor until mixture is the texture of coarse crumbs.
Press into bottom of 13 x 9 in. (33 x 23 cm) lightly greased cookie sheet.
Bake at 350°F (175°C) for 12 to 15 minutes.
Cool.
Pit and chop cherries.
Beat eggs, and stir in chopped cherries and remaining ingredients until well blended.
Pour over baked crust, spreading evenly.
Bake at 350°F (175°C) for 25 minutes, or until set.
Cool slightly.
While warm, cut into 48 bars with a sharp knife.
