Cherries Jubilee with Vanilla Ice Cream Recipe
Ingredients
| Sugar | 1 Cup (16 tbs) | |
| Water | 2 1/2 Cup (16 tbs) | |
| Salt | 1 To taste | |
| Cherries | 1 1/2 Pound, pitted | |
| Cornstarch | 2 Teaspoon | |
| Vanilla ice cream | ||
| Up to 1/2 cup (125 ml) brandy | ||
Directions
Dissolve the sugar in the water over low heat.
Add a pinch of salt and bring to a boil.
Add the cherries, reduce the heat to low, cover the pan and simmer gently for 8 to 10 minutes or until they are tender.
Drain the cherries.
Return the syrup to the pan and boil it rapidly until it is reduced to 15 cups.
Combine the cornstarch with a little cold water and add it to the syrup very gradually.
Simmer, stirring, for 2 minutes.
Add the cherries and remove the pan from the heat.
Spoon the ice cream into a bowl or into individual serving dishes.
Warm the brandy in a ladle or in a small pan, pour it over the cherry mixture and ignite with a match.
Pour the flaming cherries over the ice cream.
Serve at once.
