Chef's Brown Sauce Recipe

1/2 tsp (2 mL) sugar
1 small onion, chopped
3 tbsp (50 mL) butter
2 tbsp (30 mL) flour
1 10-oz (284 mL) can beef broth, undiluted
1/8 tsp (0.5 mL) thyme
1 bay leaf
1/4 cup (60 mL) milk
1/2 cup (125 mL) dry skim milk
1/4 cup (60 mL) water
2 tsp (10 mL) tomato paste
Directions
Place the sugar in a 4-cup (1 L) microwave-safe bowl.
Microwave, uncovered, 2 minutes at HIGH, or until sugar is partially browned.
Add butter.
Microwave, uncovered, 1 minute at HIGH.
Mix well.
Stir in flour, blend well.
Add beef broth, thyme, bay leaf and the 1/4 cup (60 mL) milk.
Mix well, then microwave, uncovered, 1 minute at HIGH.
Stir well.
Add dry milk, water and tomato paste.
Blend well.
Microwave, uncovered, 2 to 3 minutes at HIGH, or until sauce is creamy, stirring once during cooking.
Microwave, uncovered, 2 minutes at HIGH, or until sugar is partially browned.
