 1/4 pound fully cooked ham
 1 1/2. cups thinly sliced cauliflower flowerets
 Radishes1/2 Cup (16 tbs), sliced
 Green onions1/2 Cup (16 tbs), sliced
 1/2 cup reduced-calorie Italian, French, creamy cucumber, or other salad dressing
 Mixed greens4 Cup (16 tbs)
 4 ounces low-fat cheddar cheese,cut into julienne strips
 Cherry tomatoes2/3 Cup (16 tbs), halved

Directions

Trim separable fat from ham.
Use a sharp knife to cut the ham into julienne strips.
In a large mixing bowl combine cauliflower flowerets, radishes, and green onions.
Add salad dressing; toss to coat.
Set aside.
To serve, place torn greens in 4 individual salad bowls.
Arrange the cauliflower mixture, ham strips, cheddar cheese strips, and cherry tomato halves atop the greens.
