Ingredients

 75 g/3 oz cooked chicken, cut into strips
 75 g/3 oz cooked tongue, cut into strips
 75 g/3 oz Gruyere cheese, cut into strips
 Egg1 , thinly sliced
 Onion1 Tablespoon, finely chopped
 3 Tbsp black olives, stoned and chopped
 75 ml/3 fl oz olive oil
 Red wine vinegar2 Tablespoon
 Lemon juice1/2 Teaspoon
 1/4 tsp prepared French mustard
 Black pepper salt1 To taste

Directions

Break the lettuce into leaves and arrange in a large salad bowl.
Add the chicken, tongue, cheese, egg, onion and olives.
Chill for 10 minutes.
Put the remaining ingredients, with salt and pepper to taste, in a screwtop jar.
Shake well.
Just before serving, pour this dressing over the salad ingredients.
