CHEF LALA WON THE CA 5 A DAY SALSA CONTEST IN SANTA MONICA, CA THE OBJECTIVE WAS TO INCORPORATE AT LEAST 5 FRUITS AND VEGETABLES.

Ingredients

 Sodium1 Teaspoon
 Red pepper1 (roasted)
 Yellow bell pepper1 (roasted)
 Green bell pepper1 (roasted)
 Red onion1 (peeled)
 Jalapeno1 , minced (roasted)
 Chile1 , minced (roasted)
 Lime juice1 Teaspoon
 Green onion1 , sliced
 Cilantro leaves2 Tablespoon, coarsely chopped
 Heirloom tomato1 (small dice)
 Salt2 Teaspoon
 Olive oil1 Teaspoon

Directions

Method
1) Light the grill, allow the flame to burn down to a medium fire.
2) Brush peppers, and green onion with oil.
3) Grill until brown, but not burned, about 8 minutes. Turn frequently.
4) Peel, seed, and de vain peppers/chiles.
5) Prep all ingredients as outlined above, place in bowl.
6) Add lime juice, cilantro and salt to taste.
7) Chill for one hour.

Makes 3 1/2 cups.
