Ingredients

 
Crust:
 
Salt – 1 teaspoon
 
Flour – 2 cups
 
Shortening – ¾ cup
 
Ice water – 6 tablespoons
 
Filling:
 
Eggs – 3 (large)
 
Lime juice – ½ cup
 
Sweetened Condensed Milk
 
Green food coloring – 1 drop
 
Lime zest – for garnish
 
Whipped cream – to top

Directions

GETTING READY
1) Preheat oven to temperature of 400 degrees.

MAKING
2) In a mixing bowl, mix together pastry flour, salt and shortening with the help of a pastry cutter (cut the fat into the other ingredients).
3) Add the ice water and mix well with a fork.
4) Form the mixture into a very loose dough ball.
5) Roll out ½ of the dough ball on a floured surface. Use a rolling pin and stretch the pastry till it is a few inches bigger than the baking pan.
6) Cover the surface of the pan with the dough and crimp the edges.
7) Prick the dough with a fork.
8) Bake the dough in the preheated oven for 12 minutes, till the crust is light brown.
9) Let the crust cool completely.
10) Mix together the eggs, condensed milk and milk juice with an electric mixer.
11) Add the food coloring and continue to mix.
12) Pour the filling into the pie crust.
13) Reduce the temperature of the oven to 350 degrees and bake the pie for 30 minutes.
14) Let the pie stand for about an hour.

SERVING
15) Cut the pie into wedges and serve cold. A dollop of whipped cream and some lime zest make good toppings. This is an excellent dessert and can be served at any occasion!
