Directions

MAKING
1. In a large skillet, heat oil over medium-high heat, add eggplant, saute for 4 to 5 minutes, until the color changes.
2. Add onion, saute for another 4 to 5 minutes.
3. Add tomatoes, stir in marmalade. Season with salt and pepper.

SERVING
4. Garnish with mint leaves and serve over couscous.
