Cheesy Vegetable Loaf Recipe
Adapted from Sharp Microwave and Convection Cookbook.
Ingredients
| 1 cup wholemeal breadcrumbs | ||
| Carrot | 1 Medium, grated | |
| Zucchini | 1 Medium, grated | |
| Potato | 1 Medium, grated | |
| Leek | 1 , sliced | |
| Cheddar Cheese | 1/2 Cup (16 tbs), grated | |
| Bacon rashers | 4 , chopped | |
| Parsley | 1 Tablespoon, chopped | |
| 3 eggs, lightly beaten | ||
| 1/4 cup grated cheese, extra | ||
Directions
Preheat oven to 180°C.
Combine all ingredients.
Mix well.
Pour into a greased loaf tin and sprinkle with extra cheese.
Bake on Low Rack for 10-15 minutes on LOW MIX/BAKE 180°C.
Serve immediately.
