Cheesy Chicken Rolls Recipe
Cheesy Chicken Rolls is one of my favorites and often finds a place on my dining table. The flavors of cheese, butter, eggs and chicken makes the Chicken Roll Ups yummy. Give this rich tasting Chicken Roll Ups a try.
Ingredients
4 whole large chicken breasts, skinned, boned, and halved lengthwise
2 ounces process Swiss cheese, cut in 8 strips
2 tablespoons crumbled blue cheese
1 cup fine dry bread crumbs
1 tablespoon butter, melted
All purpose flour
2 beaten eggs
Directions
Advance preparation:
Place chicken pieces, boned side up, between clear plastic wrap.
Pound from center out to form cutlets 1/4 inch thick.
Peel off wrap; sprinkle with salt.
Place a strip of Swiss cheese at end of each cutlet; sprinkle with blue cheese.
Beginning with short side, roll up jelly roll fashion, tucking in sides.
Press end to seal well.
Mix crumbs and butter.
Coat each roll with flour; dip in eggs.
Roll in crumbs.
Place in shallow baking pan.
Cover.
Refrigerate till well chilled, 1 to 24 hours.
Before serving:
Bake, uncovered, at 350° till done, about 45 minutes.
