Cheesy Broccoli Casserole Recipe
Ingredients
2 (10 ounce) packages frozen broccoli, or 1 1/4 pounds fresh broccoli
1 cup mayonnaise
1 (10 ounce) can cream of mushroom soup
1/2 cup cracker crumbs
2 eggs, well beaten
1/4 cup finely chopped onion
Salt and pepper to taste
1 1/2 cups shredded Cheddar cheese
Directions
Cook the broccoli until tender; drain.
Combine the mayonnaise, soup, 3/4 of the cracker crumbs, eggs, onion, salt, pepper and 1 cup of the Cheddar cheese in a large bowl; mix well.
Stir in the cooked broccoli.
Spoon the mixture into a greased 2 quart casserole.
Sprinkle with the remaining Cheddar cheese and cracker crumbs.
Bake, covered, at 350 degrees for 35 to 40 minutes or until hot and bubbly.
