Cheesy Spinach Rice Recipe

Ingredients
| 10 oz frozen spinach, thawed, stalks removed | ||
| Eggs | 2 , beaten | |
| Evaporated milk | 13 Ounce, canned | |
| Instant rice | 2/3 Cup (16 tbs) | |
| Processed cheese | 8 Ounce, diced | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Onion | 1/4 Cup (16 tbs), chopped | |
Directions
In a 5 cup (1.25 L) microwave safe casserole dish, place spinach.
Cover.
Cook in oven 5-6 minutes, on HIGH.
Drain.
Set aside.
In a 10 cup (2.5 L) microwave safe bowl, mix eggs, milk, rice, cheese, salt and pepper.
Cook 2 minutes, on HIGH.
Stir.
Continue cooking 3-4 minutes or until cheese has melted.
Fold in onion and spinach.
Pour mixture into a 10 x 6 x 2 inch (25 x 15 x 5 cm) microwave safe baking dish.
On HIGH, cook 10-12 minutes or until a knife inserted in the middle comes out clean.
Cover.
