Cheesy Soya Bean Topping Recipe
Ingredients
| 1 cup / 250 ml/8 fl oz skim milk | ||
| Cornflour | 2 Tablespoon | |
| 375 g/12 oz canned soya beans, drained | ||
| 1/2 cup / 60 g/2 oz grated reduced-fat cheddar cheese | ||
| Parmesan cheese | 2 Tablespoon, grated | |
| Nutmeg | 1/4 Teaspoon, grated | |
| Parsley | 1 Tablespoon, chopped | |
| black pepper | 1 | |
Directions
Gently heat 3/4 cup / 185 ml/6 fl oz milk in a saucepan, without boiling, for 3-4 minutes.
Combine cornflour with remaining milk and stir into pan.
Cook, stirring constantly, until sauce thickens.
Stir in soya beans, cheddar and parmesan cheeses and nutmeg and cook for 2-3 minutes or until heated through.
Stir in parsley and black pepper to taste.
