1 Preheat the oven to 350°F (180°C)
2 Lightly coat the bottom of a baking dish with oil.
3 Cut a small slice from the end of each potato to make a flat base.
4 Place potato, base down, on a large spoon and make a cut 3/4 inch (2 cm) deep, or until the knife touches the edge of the spoon.
5 Repeat with each potato.
6 In a large bowl, stand potatoes completely covered in cold water for 30 minutes.
7 Drain and pat dry the potatoes.
8 Brush each potato with oil.
9 Stand potatoes in the prepared dish and bake at for 1 hour.
10 Sprinkle with cheese, dot with butter and bake 10 minutes more.
11 Serve hot.
