Cheesy Chicken Spaghetti Recipe
Cheesy chicken spaghetti is a mushroom and vegetable chicken spaghetti. This pasta recipe is prepared with cooked chicken along with veggies and mushrooms. Simply seasoned to taste, with pimientos and added cheese, the cheesy chicken spaghetti is filling and comforting.
Ingredients
1 (6 pound) hen
1 (10 ounce) package spaghetti
1 1/2 cups chopped onion
1 cup chopped green pepper
1 cup chopped celery
1 (4 ounce) jar diced pimiento, drained
1 (6 ounce) jar sliced mushrooms, drained
1 (16 ounce) package American cheese, cubed
1/2 teaspoon salt
1/2 teaspoon pepper
Directions
Place hen in a Dutch oven; add water to cover.
Bring to a boil; cover, reduce heat, and simmer 1 1/2 hours or until tender.
Remove hen, reserving 6 cups broth; let hen cool slightly.
Bone hen, and cut meat into bite size pieces; set meat aside.
Bring 1 quart reserved broth to a boil; gradually add spaghetti.
Cook, uncovered, over medium heat 10 to 13 minutes.
Do not drain.
Combine onion, green pepper, celery, and remaining 2 cups reserved broth in a medium saucepan.
Bring to a boil; reduce heat and simmer 10 minutes or until tender.
Drain.
Combine chicken, spaghetti, cooked vegetables, pimiento, and mushrooms, stirring well.
Add cheese cubes, salt, and pepper, stirring until cheese melts.
