Ingredients
1 1/2 cups Graham cracker crumbs
1/4 cup brown sugar
1/2 cup butter or margarine, melted
Filling
1/3 cup fruit juice
1 1/2 envelopes unflavored gelatin
1 cup cream cheese, softened
2/3 cup sugar
1 cup cottage cheese, drained
1 tbsp vanilla extract
1 cup whipped cream
3 kiwis, sliced
1 orange, peeled, pith removed, sectioned
1 apple, sliced
1/4 cup pecans
Directions
Crust Preheat oven to 350 °F (175 °C).
Butter a springform cake pan.
Set aside.
In a bowl, mix Graham cracker crumbs, brown sugar and butter.
Press mixture over bottom and along sides of pan.
Bake in oven 9 minutes or so.
Set aside to cool.
Filling In a small saucepan, while stirring, heat fruit juice and gelatin until gelatin dissolves fully.
Set aside.
In a bowl, whip cream cheese and sugar until soft peaks form.
Fold in cottage cheese.
Set aside.
While gelatin mixture is still liquid, add vanilla.
Pour into cheese mixture, beating vigorously.
With a spatula, gently fold in whipped cream.
Pour into crust.
Refrigerate 2-3 hours (or freeze 1 hour).
Unmold cake.
