Directions

Bake potatoes.
After standing time, halve potatoes length wise and carefully scoop out inside.
Set shells aside.
Combine potato, butter, milk, salt and pepper in medium mixing bowl.
Mash until fluffy.
Stir in 1/4 cup cheese and onion.
Spoon mashed potato mixture into potato shells.
Sprinkle remaining 1/4 cup cheese on top.
Place stuffed potatoes on serving plate.
Microwave 1 minute, 30 seconds to 2 minutes on HIGH, or until cheese melts and potatoes are hot.
Garnish with paprika if desired.
Note: Potatoes may be prepared in advance and refrigerated without cheese topping.
To reheat, Microwave 4 to 5 minutes on HIGH, or until potatoes are hot.
Top with reserved cheese.
Microwave 1 minute on HIGH, until cheese melts.
