Ingredients

 
3 tablespoons oil
 
1/4 cup soy flour
 
1 2/3 cups milk, hot
 
1/2 teaspoon salt
 
3 tablespoons nutritional yeast
 
1 teaspoon tarragon
 
1 1/2 cups hard cheese, grated
 
6 eggs, separated

Directions

Heat oil.
Blend in flour.
Gradually add milk.
Stir until smooth and thickened.
Blend in salt, yeast, tarragon and cheese.
Remove from heat.
When cool, blend in egg yolks.
Fold in stiffly beaten egg whites.
Turn mixture into oiled casserole, or oiled individual custard cups.
Bake uncovered at 350° F., 45 minutes for casserole, 30 minutes for custard cups.
Do not open oven door while baking.
