Ingredients
1 tablespoon plain flour
1 tablespoon butter
1 teacup milk
1 1/4 teacups grated cooking cheese
2 to 3 eggs
1/2 teaspoon mustard powder, salt and pepper to taste
Directions
Melt the butter in a vessel, add the flour and cook for 1 minute.
Add the milk and go on stirring and cooking all the time until the mixture becomes thick.
Add 1 teacup of grated cheese and salt and pepper.
Mix the mustard powder in 2 teaspoons of water and add to the mixture.
Cook on a very slow flame until the cheese melts.
Separate the eggs.
Beat the egg-yolks very well and add to the mixture.
Beat the egg-whites stiffly and add to the mixture.
Pour into a greased baking dish. Leave plenty of room in the dish for the souffle to rise. Sprinkle the remaining cheese on top.
