Butter- 4 tablespoons
 
Flour- 4 tablespoons
 
Hot milk- 1 1/2 cups
 
Salt- 1 teaspoon
 
Cayenne- a small amount
 
Sharp cheese-1/2 pound, grated
 
Eggs- 6, separated

Directions

GETTING READY
1.Start by preheating the oven to 300F degrees
MAKING
2.In a saucepan, melt butter, add flour and blend
3.Now add milk and cook until thickened, make sure to keep stirring constantly
4.Then add seasonings and cheese; heat until cheese is melted
5.Last, add beaten egg yolks
6.Let it stand to cool
7.Pour into stiffly beaten egg whites and mix well
8.Bake in 2 quart ungreased baking dish for 11/4 hours
SERVING
9.Serve with steamed broccoli sprinkled with a little lemon pepper or creamed spinach
