Ingredients

 25 mL 2 tbsp margarine
 All purpose flour15 Milliliter
 250 mL 1 cup 2% milk
 50 mL 1/4 cup mozzarella cheese, in pieces
 250 mL 1 cup Gruyere cheese, in pieces
 125 mL 1/2 cup light ricotta cheese
 500 mL 1 lb short pasta
 Pepper1 To taste

Directions

Melt the margarine in a saucepan over medium heat.
Add the flour and mix well.
Add the milk and the cheeses.
Let them melt over low heat.
Cook the pasta in salted, boiling water.
Drain.
Add the pasta to the cheese sauce; pepper and mix well.
