Cheese Omelette (Frittata Di Formaggio) Recipe
Ingredients
6 eggs
2 tablespoons water
1/4 cup (62.5 ml) olive oil
1/4 lb (125 g) Mozzarella cheese, diced
salt and pepper
Directions
Lightly beat the eggs with the water.
Heat the oil in a frypan and, stirring constantly, brown the cheese.
Add the eggs, season with salt and pepper and cook, covered, over a low heat until the bottom is browned and the eggs mostly set.
Put frypan under a very hot broiler to cook the top of the omelette.
