Cheese Meat Loaf Pinwheel Recipe
Ingredients
| Ground beef | 1 Pound | |
| 1/2 lb lean ground pork 250 g | ||
| Shredded Cheddar cheese | 1 Cup (16 tbs) | |
| 1/2 cup fine dry bread crumbs 125 mL | ||
| Egg | 1 , beaten | |
| Worcestershire sauce | 2 Teaspoon | |
| Salt | 3/4 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Spinach-Mushroom Filling:- | ||
| Spinach package | 1 | |
| Butter | 1/4 Cup (16 tbs) | |
| Mushrooms | 1 Cup (16 tbs), sliced | |
| Onions | 1/2 Cup (16 tbs), chopped | |
| Parsley | 1/4 Cup (16 tbs), chopped | |
| Egg | 1 | |
| Salt, Pepper and Nutmeg | To Taste | |

Directions
Spinach-Mushroom Filling: Steam spinach until wilted; refresh with cold water.
Drain and squeeze out excess moisture; chop coarsely and set aside.
In skillet, melt butter over medium heat; cook mushrooms and onions until onions are translucent.
Transfer to bowl.
Add spinach, bread crumbs, parsley, egg, salt, pepper and nutmeg; mix well.
In bowl, combine beef, pork, cheese, bread crumbs, egg, Worcestershire sauce, salt and pepper; mix well.
Place meat mixture between 2 sheets of waxed paper and roll into 18- x 8-inch (45 x 20 cm) rectangle.
Remove top sheet.
Spread spinach mixture evenly over meat, leaving 1/2-inch (1 cm) border.
Roll up meat from short end.
Ease into 9- X 5-inch (2 L) loaf pan.
Bake in 350°F (180°C) oven for about 1 hour or until browned and meat thermometer registers 160-170°F (71-75°C).
