Olive or salad oil - 1/4 cup
Onion - 1 cup, finely chopped
Garlic - 1 clove, crushed
Italian tomatoes -1 can (2 lb, 3 oz)
Tomato paste - 1 can (6 oz)
Tomato sauce - 1 can (8 oz)
Parsley - 2 tablespoons, chopped
Salt - 1 tablespoon
Sugar - 1 tablespoon
Dried oregano leaves - 1 teaspoon
Dried basil leaves - 1/2 teaspoon
Pepper - 1/4 teaspoon
Lasagna noodles - 1 pkg (1 lb)
Cheese Layer:
Ricotta cheese - 2 cartons (15-oz size)
Mozzarella cheese - 1-1/2 pkg (8-oz size), grated coarsely
Parmesan cheese - 1/2 cup, grated
Eggs - 2
Parsley - 1 tablespoon, chopped
Salt - 1 teaspoon
Pepper - 1/4 teaspoon
Parmesan cheese - 3 tablespoons, grated
Mozzarella cheese - 1/2 pkg (8-oz size), grated
Directions
GETTING READY
1. Preheat oven to 350F.
2. Cook lasagna noodles as package label directs.
3. Grease a 14-by-10-by-2-inch baking pan.
MAKING
4. Prepare the tomato sauce first in a 6-quart kettle by heating the oil. Add the onions and then sauté onion and garlic until golden-brown. This will take about 10 minutes.
5. Add undrained tomatoes, tomato paste, tomato sauce, 2 tablespoons parsley, 1 tablespoon salt, the sugar, oregano, basil, and 1/4 teaspoon pepper; mix well, mashing tomatoes with fork. Bring to boiling; reduce heat, simmer, covered and stirring occasionally for 1 hour.
6. Make Cheese Layer in a large bowl. Combine ricotta, 1-1/2 packages mozzarella, 1/2 cup Parmesan, the eggs, parsley, salt, and pepper. Beat with wooden spoon until all ingredients are blended. Spoon a little tomato sauce into prepared pan.
7. Layer noodles, cheese mixture, and tomato sauce. Repeat until all ingredients are used, ending with tomato sauce. Sprinkle with 3 tablespoons Parmesan and 1/2 package mozzarella. Bake, uncovered, 45 to 50 minutes, or until cheese is melted and top is browned.
SERVING
8. Serve hot
