Cheese Custard Pie Recipe

Ingredients

 Plain pastry1
 Lean bacon strip12
 Swiss cheese1⁄4 Pound, grated
 Eggs4
 Top milk/Light cream2 Cup (32 tbs)
 Salt1 Dash

Directions

Prepare plain pastry (p. 30); divide in two.
Roll out one half and fit into a nine-inch pie plate.
Heat oven to hot (450°F.).
Cook bacon in a skillet until brown and crisp.
Drain and then crumble into unbaked pie shell.
Place grated cheese over the bacon.
Combine eggs, milk and seasonings and pour over cheese-bacon mixture.
Place in the hot oven for 10 minutes, then reduce the heat to slow (300°F.) and bake for 25 to 30 minutes longer or until the custard is set.
If the pie is not brown enough after this baking period, pop it under the broiler for a few seconds to brown up the top.
You can use browned onions in place of the cheese and have an onion and bacon pie.
