Cheese crepes Recipe
Yummy delicious snack or a hearty breakfast, you can decide just how to serve these delicious cheese crepes. They are really easy to make and yummy in every bit. Enjoy!!

Ingredients
3 eggs
Sugar
1/2 tsp. salt
1 c. milk
1 1/4 c. flour
Butter
1 lb. riced cottage
cheese
Rind of 1 lemon
1 pt. sour cream
2 egg yolks
Directions
Beat eggs; add 2 tablespoons sugar and salt.
Stir in milk and flour alternately until smooth.
Melt 1/2 tablespoon butter in 8-inch frying pan.
Pour in 1/4 cup batter.
Tilt pan until batter covers bottom of pan.
Bake until crepe is lightly browned and dry; turn crepe.
Bake remaining side.
Repeat until all batter is used, adding butter to skillet as needed.
Stack crepes on serving dish.
Mix cottage cheese, 1/2 cup sugar and lemon rind; spread 1 tablespoon mixture on each crepe.
Roll up as for jelly roll.
Suggested: You can place the crepes in layers in a baking dish.
Mix sour cream, egg yolks and 1/4 cup sugar.
Pour over top of crepes.
Bake in 350-degree oven for 45 minutes.
