Directions

In howl combine rice, carrots, 1 1/2 cups cheese, milk, eggs, onion, salt, and pepper.
Pour into greased 1 1/2 quart baking dish.
Sprinkle with remaining cheese.
Bake in 350°F toaster oven 45 minutes.
