Cheese and Rice Croquettes Recipe
Ingredients
| Butter | 1/4 Cup (16 tbs) | |
| Flour | 1/3 Cup (16 tbs) | |
| Milk | 1 Cup (16 tbs) | |
| Cheese | 1 Cup (16 tbs), grated | |
| Salt | 1/4 Teaspoon | |
| Pepper- a small amount | ||
| Paprika- a small amount | ||
| Cooked rice | 2 Cup (16 tbs) | |
| Fine dry crumbs- as required | ||
| Egg | 1 | |
Directions
MAKING
1.In a saucepan, melt butter, blend in flour and add milk
2.Cook until thickened, stirring constantly
3.Add cheese and heat until melted
4.Add seasonings
5.Chill
6.Add rice and shape into croquettes
7.Roll in crumbs, in slightly beaten egg and again in crumbs
8.Brown in hot deep fat (380° F.)
SERVING
9.Serve with a sauce of your choice
