Ingredients
21/2 cups (625 mL) eggplant, peeled and cubed
1 tbsp (15 mL) water or white wine
15 to 18 soda crackers, crushed
1/2 cup (125 mL) strong Cheddar cheese grated
1/4 cup (60 mL) finely chopped celery
1 tsp (5 mL) basil
1 tbsp (15 mL) melted butter
1/2 tsp (2 mL) each sugar and salt
1/4 tsp (1 mL) pepper
1/2 cup (125 mL) cream
1 tbsp (15 mL) cornstarch
Directions
Place the eggplant cubes in a 4-cup (1 L) microwave-safe dish.
Add the water or white wine.
Cover and microwave at HIGH 4 minutes.
Drain thoroughly and set aside.
Mix all the remaining ingredients.
Add to the eggplant.
Stir until well mixed.
Cover and microwave at HIGH 8 to 9 minutes.
Let stand 3 to 4 minutes.
Stir and serve.
Add the water or white wine.
Cover and microwave at HIGH 4 minutes.
Drain thoroughly and set aside.
Mix all the remaining ingredients.
Add to the eggplant.
Stir until well mixed.
