 Knackwurst4 Large
 Water
 Swiss Cheese1/4 pound
 1/2 cup each thinly sliced celery, diced sweet pickle, and diced green pepper
 Red onions2 Small, separated into rings
 2 hard-cooked eggs, sliced
 Mustard dressing

Directions

Place wurst in a pan with enough water to cover; bring to a boil, reduce heat, and simmer for 10 minutes.
Remove sausage from water and set aside to cool.
Peel and discard casings, if desired.
Slice meat and cheese into julienne strips about 3 inches long.
Combine celery, pickle, and green pepper.
Place wurst, cheese, celery mixture, onion rings, and egg slices in a salad bowl.
Cover and chill, if made ahead.
Prepare mustard dressing.
To serve, mix dressing evenly into salad
